Tender Pie with Airy Cream and Peaches #74

    I want to share with you the recipe for shortcrust pie with peaches and tender cream. This tasty pie just melts in your mouth!

    DOUGH:
    • 220 g Flour
    • 120 g Butter
    • 3 pcs. Egg yolks
    • 30 g Sour cream (or 10% Greek yogurt)
    • 50 g. Powdered Sugar
    • Salt
    • 2 g. Baking powder
    CREAM:
    • 600 g Sour cream (or 10% Greek yogurt)
    • 3 pcs. Egg whites
    • 30 g Corn starch
    • 170 g Sugar
    • 2 pcs. Peach

    DOUGH:
    • 220 g Flour

    • 3 pcs. Egg whites
    • 30 g Corn starch

    Instructions
    1. Sift the flour into a large bowl and mix it with powdered sugar, salt and baking powder. Grate butter on the coarse grater.
    2. Mix the flour with butter.
    3. Add 3 egg yolks and sour cream.
    4. Knead soft and elastic dough. Cover it with cling film and leave in the fridge for 30 minutes.
    5. In the meantime, cut 2 peaches into small cubes.
    6. Now let`s get down to making the cream. Whisk 3 egg whites until they are foamy. Add sugar and continue beating until stiff peaks form.
    7. Take a separate bowl and mix sour cream, sugar and cornstarch in it. Whisk everything together.
    8. Mix this mass with egg mixture.
    9. Take the dough out of the fridge. Cut it into 2 parts.
    10. Cover baking tin with the parchment.
    11. Spread 3/4 of the dough into the bottom of your baking tin.
    12. Top it with the layer of peaches and tender cream.
    13. Grate remaining dough and use it to cover your pie.
    14. Bake it in the oven preheated to 356 F for 35-40 minutes.
    15. Once the pie is ready, take it out of the oven and let it cool dour completely. Take it out of the baking tin and get rid of the parchment.
