Mimosa Cake Recipe #70

    This Italian cake is one of the most popular spring desserts. Sponge cake with a rich custard is both good-looking and very tasty.

    Dough:
    • 3 pcs. Eggs
    • 100 g. Sugar
    • 100 g. Flour
    • 4 g. Baking powder
    • 15 g. Corn starch
    Cream:
    • 1 pcs. Egg
    • 45 g. Sugar
    • 250 ml. Milk
    • 30 g. Corn starch
    • Zest of 1 lemon
    • 200 ml. Fatty cream (30- 33 %)
    Syrup:
    • 40 g. Sugar
    • 40 g. Water

    Dough:

    Syrup:
    • 40 g. Sugar
    • 40 g. Water
    Instructions
    For the sponge cake
    1. Mix flour, cornstarch and baking powder.
    2. Beat eggs with powerful mixer. Add sugar and continue whipping until the mixture is thick enough.
    3. Sift the dry ingredients on the top of egg mixture. Mix everything slowly.
    4. Cover the bottom of your cake tin with the parchment. Pour the dough into it. Bake it for 30 minutes at 356 F.
    For the cream
    1. Mix egg, cornstarch, sugar and lemon zest.
    2. Pour in milk. Put the saucepan on the stove and heat your cream, stirring constantly.
    3. Cover it with cling film. Set it aside.
    4. Whip heavy cream with an electric mixer.
    5. Transfer cold custard to the deep bowl. Whip it and mix with cream.
    6. Mix sugar and hot water in the small bowl. Once sugar dissolves, your syrup is ready.
    Forming the cake
    1. Take your sponge cake out of the oven and leave it to cool down.
    2. Remove it from the baking tin. Slice the cake into three layers.
    3. One of the layers will be used for decoration. Cut off the dark sides of this cake and slice the rest of the layer into small cubes.
    4. Assemble the cake. Transfer the first layer to the plate and sprinkle it with the syrup.
    5. Cover it with the layer of the cream. Repeat the same with the second layer of the cake.
    6. Coat the outside of your dessert with the remaining cream. and decorate it with the sponge slices.
    7. Decorate it with the sponge slices.
    8. Chill it before serving.
