Cream Puffs with Crunchy Crust #30

    Crunchy dough:
    • 40 gr. sugar
    • 50 gr. butter
    • 40 gr. wheat flour
    • 15 gr. ground almonds
    • 20 gr. almond petals
    Choux pastry:
    • 110 ml. water
    • 15 gr. butter
    • a pinch of salt
    • 50 gr. flour
    • 2 pcs. eggs
    Cream:
    • 250 ml. milk
    • 40 gr. sugar
    • 20 gr. flour
    • 2 pcs. egg yolk
    • 15 gr. butter
    • 20 ml. condensed milk
    • 80 ml. heavy cream

    Crunchy dough:
    • 40 gr. sugar
    • 50 gr. butter
    • 40 gr. wheat flour
    • 15 gr. ground almonds
    • 20 gr. almond petals
    Choux pastry:

    • a pinch of salt
    • 50 gr. flour
    • 2 pcs. eggs
    Cream:
    • 250 ml. milk
    • 40 gr. sugar
    • 20 gr. flour
    • 2 pcs. egg yolk
    • 15 gr. butter
    • 20 ml. condensed milk
    • 80 ml. heavy cream
    Instructions
    For the crust
    1. Combine the flour with ground almond and butter in the bowl of the blender. Mix everything.
    2. Cover the table with cling film. Place the dough in the middle of the table and roll to 0.3 inch thickness. Top the dough with almond petals. Cover it with cling film and transfer to the fridge for 20 minutes.
    For the dough
    1. Fill the pan with water. Add butter and salt.
    2. Boil this mass and add the flour to the pan. Cook it on low heat, stirring constantly.
    3. Whisk 2 eggs by hand.
    4. Transfer the choux pastry to the bowl and add egg mixture in parts. Mix everything carefully.
    5. Take almond dough out of the fridge and cut it into squares.
    6. Pipe out middle-sized choux mounds. Cover them with the squares of the almond dough. Bake your dessert for 10 minutes at 200 °C. In ten minutes reduce the heat to 180 °C and cook your puffs for 15 more minutes.
    7. Remove from oven and leave them to cool down.
    For the cream
    1. Mix 2 egg yolks with sugar. Add the flour to the bowl and mix everything one more time.
    2. Pour in milk and whisk this mixture. Heat it, stirring constantly.
    3. Remove the pan from heat. Add condensed milk and butter. Mix it until well-combined.
    4. Pour in heavy cream. Whisk it to stiff peaks.
    5. Transfer whipped cream to the bowl with the rest of ingredients and mix everything one more time.
    6. Cut off the top of each puff. Fill it with tender cream.
    7. Cover it with the top of the puff. Enjoy your meal!
