Breakfast Lemon Puffs with Custard #59

    • 1 pcs. egg yolk
    • 40 gr. sugar
    • 230 ml. milk
    • 20 gr. corn starch
    • lemon zest
    • juice of 1/2 lemon
    • 2 packs puff pastry

    • 1 pcs. egg yolk
    • 40 gr. sugar
    • 230 ml. milk
    • 20 gr. corn starch
    • lemon zest
    • juice of 1/2 lemon
    • 2 packs puff pastry
    Instructions
    1. Mix egg yolk with sugar and corn starch until the mass is smooth enough.
    2. Add milk, lemon zest and lemon juice. Mix all the ingredients well.
    3. Cook the custard over low heat, stirring constantly.
    4. Once it is thickened, remove the pan from oven. Leave the custard to cool down.
    5. Cut puff pastry into middle-sized squares (approximately 12×12 cm).
    6. Cut one half of the square into stripes (about 1 cm wide).
    7. Grease another half of the square with melted butter.
    8. Wrap it up.
    9. Cover puff pastry with the custard.
    10. In the picture above you can see the way you need to fold the puff. Form the rest of triangles.
    11. Arrange them on the tray, covered with the parchment. Grease them with water. Dust your puffs with sugar. Bake for 25 minutes at 365 F.
    12. Once you`re done, dust lemon puffs with powdered sugar.
