Best Napoleon Cake with Custard #100

    DOUGH:
    • 420 g. Flour
    • 300 g. Butter
    • 1 pcs. Egg
    • 1/2 tsp. Salt
    • 10 g. Vinegar
    • 110 ml. Water
    CUSTARD:
    • 2 pcs. Eggs
    • 180 g. Sugar
    • 45 g. Corn starch
    • 600 ml. Milk
    • Vanillin
    • 120 g. Butter

    • 420 g. Flour

    • 1/2 tsp. Salt

    CUSTARD:
    • 2 pcs. Eggs
    • 180 g. Sugar
    • 45 g. Corn starch
    • 600 ml. Milk
    • Vanillin
    • 120 g. Butter
    Instructions
    For the dough
    1. Sift the flour into a deep bowl. Grate cold butter on the coarse grater.
    2. Stir until you get a fine crumb.
    3. Whisk 1 egg with salt and vinegar. Add cold water.
    4. Mix all the ingredients together.
    5. Dust the table with the flour. Knead the dough. Divide it into 8 pieces. Form small balls.
    6. Transfer them to the plate, covered with the thin layer of flour. Cover the plate with cling film and transfer it to the fridge for 2 hours.
    7. Take 1 part of the dough and dust it with the flour. Roll it into a thin circle. Cut off the edges.
    8. Cover baking tray with the parchment. Arrange the layer of the cake and pierce it with a fork. Bake for 7 minutes at 200 °C.
    9. Do the same thing with the rest of the layers.
    For the cream
    1. Combine 2 eggs with sugar, vanilla and cornstarch. Whisk this mass.
    2. Pour in milk.
    3. Set the pan over low heat. Cook the custard, stirring constantly.
    4. Once it is thickened, add cream and mix everything until well-combined.
    5. Cover it with cling film. Leave the custard to cool down.
    Assembling the cake
    1. Crumble 1 puff pastry sheet.
    2. Cover the edges of the plate with wide strips of the parchment. Smear on some custard on the plate.
    3. Place the first puff pastry sheet in the middle of the plate. Cover it with the layer of custard.
    4. Do the same thing with the rest of layers. Cover the sides of your dessert with remaining custard.
    5. Decorate your cake with crumbles. Get rid of the parchment.
    6. Leave the cake to cool down. Enjoy your meal!
